Eating lobster is usually a luxury for us – reserved for special occasions or a decadent and delicious treat! With the summer days winding down and fall just around the corner we thought there is no better time than now to enjoy one of our all time summer favourites.

Lobster Roll

Ingredients
4 Lobster Tails
3 Tbsp Mayonnaise
1 Tsp Fresh Lemon Juice
2 Tbsp Finely Chopped Celery
1 Tsp Chopped Fresh Parsley
2 Tsp Scallion
1/2 Avocado
1 Dash Sriracha
Pinch Of Salt & Pepper
Italian Roll
2 Tbsp Melted Butter
Optional – Lettuce For Serving
Directions
Cook lobster accordingly and set aside.
In a separate, small bowl combine the mayonnaise, lemon juice, celery, parsley, scallion, hot sauce, and salt and pepper. Mix and taste for seasoning. Once you have the seasoning to your liking, add to the cooked lobster meat and mix.
Brush both sides of rolls with butter and toast both sides in a medium fry pan over medium heat until nicely browned.
Divide the lobster salad between each roll per your preference. If you decide to use lettuce place lettuce in bun before laying the lobster salad. Enjoy!
