Caprese Grilled Cheese

I've never met a problem that cheese couldn't solve!

Picture yourself relaxing on one of the most stunning patios on the Isle of Capri overlooking the Faraglioni sea stacks enjoying a traditional Insalata Caprese. Feels like you're on cloud nine right? Some nights I dream of Capri and today I decided to bring a small piece of Capri to my kitchen by marrying the traditional Insalata Caprese with the well know North American Grilled Cheese.

The first origin story for Caprese salad dates back to post-World War I Italy. A patriotic mason wanted to make a dish that was a true tribute to Italy and that visually incorporated the tricolor into the presentation. The first printed mention of the Caprese salad was on a menu at the Hotel Quisisana.

This grilled cheese marries the most notable ingredients in Italian cuisine; cows milk mozzarella, vine tomatoes, basil, olive oil and garlic with a fresh, crusty sourdough bread. Let's get this Italian party in your mouth started! Start by slicing your sourdough bread in to thick slices and brush one side of each slice with olive oil and garlic. Heat a non stick pan over media high heat and place both slices of sourdough in to the pan, oiled side down.


As the sourdough begins to sizzle in the pan, place sliced mozzarella, tomatoes and a sprinkle of salt, pepper and basil on one slice of sourdough. Feel free to use fresh basil as well! Now form it in to a sandwich and grilled each side until golden brown and the cheese has melted.


Voila! Top it off with another sprinkle of basil, cut it in half and picture yourself in the Center Of Capri in the famous Piazza Umberto, enjoy!

Caprese Grilled Cheese

Ingredients


  • 2 Slices Of Sourdough Bread (or bread of your choice)

  • 3 Slices Of Fresh Mozzarella

  • 3 Slices Of Tomato

  • 1 tsp Of Basil

  • 1 Garlic Clove

  • Sprinkle Of Olive Oil


 

Directions

  • Heat nonstick pan over medium high heat.

  • Brush olive oil and garlic clove on one side of each slice of bread and place bread in pan olive oil side down.

  • Add mozzarella, tomato and basil to one slice of bread and top it with the other slice.

  • Cook until golden brown on both sides.

  • Remove from pan, slice in half, sprinkle with a little more basil & enjoy!
