When we think of flatbreads we think of savoury, rarely ever do we think of adding something sweet. Throughout the summer months berries tend to take centre stage at the fruit stands and I always believe blueberries deserve to steal the spotlight once in awhile, don't you think?
How To Make Blueberry Goat Cheese Flatbread
Let's get this flatbread party started with your favourite pizza dough. I prefer to use my own homemade dough because it just adds to the freshness of this dish. Roll the dough out and place it on a greased baking sheet. Brush the dough with olive oil, I use a lemon infusion olive oil, and season with salt in over. Place the flatbread in the oven for 3-4 minutes to pre-bake while you prep the toppings.
While the dough begins to cook in the oven, I like to organize my toppings. Thinly slice your red onion, wash your fresh spinach and blueberries and crumble your goat cheese. Once your dough has lightly toasted, remove it from the oven and begin assembling your blank canvas. Begin with the crumbled goat cheese. The cheese will begin to soften and this is the perfect time to spread the cheese evenly on your flatbread.
When it comes to designing your flatbread let your creativity flow. Arrange the spinach, onion and blueberries to your culinary liking then place your masterpiece in the oven and cook until the crust is nice and golden; about 20-25 minutes.
Voila! Don't forget to finish off your flatbread with the balsamic glaze drizzle. This finishing touch highlights the juices from the blueberries and tanginess from the goat cheese, along with all the other fresh flavours of your flatbread. Enjoy!

Blueberry Goat Cheese Flat Bread

Ingredients
Pizza Dough
1 Tbsp Of Olive Oil
4 Tbsp Goat Cheese
1/2C Thinly Sliced Onion
1/2C Baby Spinach
1/3C Blueberries
1 Tbsp Balsamic Glaze
Directions
Preheat oven to 400 degrees.
Roll out pizza dough and place it on a greased baking sheet.
Brush dough with olive oil and season with salt and pepper. Place seasoned dough in the oven for 3-4 minutes and allow dough to pre-bake.
While dough is pre-baking thinly slice onions, wash spinach and blueberries and crumble goat cheese.
Pull dough out of the oven and spread goat cheese on top, then add spinach, onions and blueberries.
Put the flatbread back in the oven for 20-25 minutes or until it is lightly golden brown.
Once flatbread is fully cooked drizzle balsamic glaze over the top and enjoy!
